Squash casserole is a classic at S&S Cafeteria

S&S CAFETERIA’S SQUASH CASSEROLE

2 1/2 pounds squash, rinsed and dried Water 1 cup powdered milk 3 tablespoons chicken base 1 1/2 cups crumbled crackers 2 eggs 4 tablespoons margarine, melted 2 tablespoons granulated sugar Black pepper

Preheat oven to 350 degrees. Grease a 9-by-13-inch baking dish.

Trim ends of squash and slice into 1/4-inch rounds. Steam squash over water just until tender. Do not overcook. Save steaming liquid. Set squash aside.

In a large bowl, combine squash steaming liquid, dried milk powder and chicken base. Mix until thoroughly combined. Add enough additional water to make 3 cups liquid.

Stir in crackers, eggs, margarine, sugar and pepper. Stir well. Then carefully fold in cooked squash. Pour into prepared baking dish and bake about 30 minutes or until top is golden. Serves: 12

Per serving: 380 calories (percent of calories from fat, 60), 19 grams protein, 18 grams carbohydrates, 18 grams fiber, 25 grams fat (9 grams saturated), 115 milligrams cholesterol, 418 milligrams sodium.

I would love to have the recipe for the squash casserole at S&S Cafeteria. This recipe is as good as it gets. I have tried many varieties of recipes for this casserole and cannot get it quite like the S&S. Thanks for your help.

The folks at S&S Cafeteria were happy to share their recipe. They make it with 5 pounds, 25 pounds and even 35 pounds of squash at a time.

We’ve scaled it back for home cook use to half the smallest size recipe. One secret to the recipe is that they steam the squash and then save that steaming liquid to make a chicken-squash stock for the casserole.

And to enhance the casserole’s golden yellow color? They add just a drop of yellow food coloring.

We didn’t include that in the recipe although you can certainly add it if you like.
